A flight is a flight, and the having to run additional flight with the E2 to match CSeries capacity, applies to all airlines.
There’s also fact that two E2s could be too much capacity as opposed to one CS300.
Let’s say that an airline operates one weekly flight with the CS300, and said flight is always full. The route only has enough demand for a once weekly, so that’s all it gets. If said airline changes to a fleet of E2s, they no longer have the capacity for the always full flight, so they’re left with two options; 1.) Fly a second flight that only has 40 passengers on board, or, 2.) Keep the flight once weekly, and not be able to serve their passengers as needed.
If I was in that airline’s shoes, I’d say either keep the CS300, or change to the E145 and fly three times weekly. (E145, or any 50 seat RJ has higher seat mile costs though, so the CS is cleaner and more profitable to operate.)

also the pandemic proved that efficiency is what is needed, and thus the E2 is better off than the A220 in most routes, given the reduced demand

Then why didn’t the E2 gain orders? The CS did, it became known as the champion of the pandemic .

Those CSeries would be delivered in the likes of 2022/2023, when demand was expected to return, and thus it wouldn’t make sense to get the smaller E2 in those “normal” times

So, yes, hypothetically you could fly 2 E175-E2 services and match capacity, but that’s an additional landing fee, and additional slot expense, additional time that ground crews are working, additional fuel that has to be purchased, etc.

That’s going off of what planes are currently available to the market. 175-E2 isn’t around yet. The normal E175 (which is the better 175) does exist however, and would be an ideal fit for the route.
