The config on the plane that flies that route is over 50% business class, so I would imagine you are right. There is only Premium economy aboard the plane as well.

No, they should be scared if the engines are still running at full power after takeoff since the power setting used for takeoff may exceed the maximum continuous thrust rating.

Well, they may think that the engines will suffer damage if they keep running like that for a long period of time, which isn’t exactly wrong.
I don’t think they are able to tell when the N1% is too much, unless they fly very often.
Unpopular opinion. I love turbulence. Ive never hit severe turbulence tho I have hit some pretty good moderate tho.
